Aqua Restaurant, in Komandoo Maldives, is a fine-dining restaurant. Located at the Komandoo Island Resort & Spa, Aqua offers diners an excellent range of fresh seafood and fine wines complimented by beautiful views of their sunsets. What’s more, my husband and I aren’t big on fine dining as often we are disappointed with the style over substance element of fine-dining establishments.
How to Book a meal at Aqua Restaurant, Komandoo

Firstly, the inside of the restaurant includes a glass floor which allows diners to see below the above-water restaurant to view the sea life swimming below.
We arrived early at Aqua. On arrival, a champagne glass is handed to diners. Most diners, choose to sit out on the deck to enjoy the beautiful sunsets. A series of expertly crafted dishes by Celebrity Chef Tintin, a member of the Canadian Culinary Team.
And with each dish, Chef Tintin would come by to explain the dish and its process which was a welcome experience.
What is the food like at Aqua Restaurant?
As it was included, we saw no harm in trying the menu at Aqua. The evening at Aqua was worth it.
Regarding the menu, which I believe was still in testing on our arrival (September 2022), we had several options to choose from each. My husband and I went for different items. Both of us were very happy with our choices.
The menu consisted of:
Starters
- CLARIFIED GAZPACHO – Cherry Tomato, Feta Cheese, Fermented Tomato Seeds, Crispy Bell Pepper, Grissini, Passion Fruit Puree, Black Olive Powder, Basil Oil
- TEMPURA REEF FISH – Fried Nori, Spicy Mayo, Scallions & Citrus
- STEAK TARTARE – Bone Marrow, Egg Yolk, Mustard, Shallots, Cornichons, Capers, Parsley, Worcestershire, Grissini
To begin, my husband chose to go for the Gazpacho, in fact he distinctly doesn’t enjoy soup or cold soup for that matter, he was incredibly surprised by how much he enjoyed it. I went for the tempura reef fish. I’m not a fan of seafood, but I found it to be delightful. It was interesting as an introduction to fine dining.
Mains
- CRISPY CAULIFLOWER – Tzatziki Sauce, Buffalo Sauce, Spring Onion, Pomegranate, Chili & Herb Oil
- CATCH OF THE DAY – Fish Fillet Baked in Banana Leaf, Steamed Rice, Thai Salad, Chili Sauce
- SOUS VIDE CHICKEN – Black Garlic Cauliflower Puree, Spinach Gnocchi, Broccoli, Crispy Garlic, Coconut Curry Sauce
- ANGUS BEEF SKEWER – Angus Beef Skewer, Truffle Potato, Organic Vegetables, Tortilla Bread, Tomato Salsa
Next, my husband chose to go with the Angus Beef Skewer, which he thoroughly enjoyed. The meat was perfectly cooked and the flavours all complimented one another perfectly. I personally chose to go with the special of the day, which didn’t appear on the menu. Lamb shanks, which also, was incredibly delicious and tender.
Desserts
- BENGALI BAKED YOGHURT – Granola Crumble, Caramelized Lhaviyani Atoll Banana
- PLANT-BASED MANGO CAKE – Raspberry Sauce, Fresh Mango Chutney
- COCONUT DOME – Coconut Crumble, Mango Coulis, Roasted Coconut Ice Cream, Mango Fruit Leather, Meringue
Finally, for dessert, both my husband and I chose to go with the Coconut Dome. Having enjoyed all the coconut flavour desserts during our stay at Komandoo, we felt we had to keep the coconut flavours in our palette.
Verdict
As a result of our evening, in comparison to 5.8 Undersea Restaurant, the food was much more enjoyable. Each dish was eaten without resistance and the mains and the desserts were perfect for romantic evening dining.
If we opted to travel to Komandoo again we would definitely revisit Aqua.
